In Alice’s Adventures in Wonderland, Lewis Carroll’s heroine famously nibbles on a mushroom cap to grow larger or smaller. And amazing ‘shroom powers are made much of by the Hogwarts School of Witchcraft and Wizardry in the Harry Potter tales, too. Indeed, mushrooms have long been seen as a font of magic and inspiration. No wonder today’s mixologists are unearthing (non-psychoactive) fungi as cocktail accents.

At Table 45, a classic gin-based cocktail, the Gibson, takes a trip to the forest by using dry vermouth infused with morel mushrooms. Instead of the traditional garnish of pickled onion, it’s presented in a martini glass with yuzu-pickled buna-shimeji (aka brown beech) mushrooms.

Broken Spell Lounge pays homage to the Disney classic Sleeping Beauty, but it’s not the kiss of a prince that revives. It’s the cocktail named for the mushroom Amanita muscaria. Though its namesake is psychedelic, this libation relies on booze for effect; it’s built with mushroom-infused bourbon and garnished with a marinated portabella cap.

In the city where illusion is ev-erything, Easy’s Cocktail Lounge serves its Shroomin’ cocktail in a hand-blown mushroom-shaped glass rimmed with dry herbed sugar on a smoking moss and mushroom-flled wooden board. It also offers a Happy Foraging option—though neither drink has actual mushroom in the recipe.

Sip a Sour-Shrooms at Spire 73—the tallest open-air bar in the Western Hemisphere—that’s built with gin-infused mushrooms, maple syrup, bitters and lemon. It’s rich, complex and unexpectedly smooth, balancing umami notes from the ‘shrooms with citrus and sweetness; egg white (or a vegan alternative) adds silky texture.
